Signature Staff recently had the pleasure of supporting Cairns Spit Roast Catering by Catherine Pacey at a large Cooktown event. From the start, Catherine and her team made us feel part of their team, creating a warm and welcoming environment.

About the Event

The team supported a 450-person function in Cooktown, located four hours north of Cairns. Our crew of five—one chef and four waiters, including a team leader—handled food preparation, carving, buffet setup, service, replenishment, and pack down. Accommodation was provided, allowing the team to enjoy shared dinners after the shift and explore the local area. The experience perfectly combined professional service with team bonding and a touch of local tourism.

About Cooktown, QLD

Cooktown is a historic coastal town located in Far North Queensland, about four hours north of Cairns. Known for its stunning natural scenery, Cooktown sits where the rainforest meets the reef and offers a unique glimpse into Australia’s past—it’s famously where Captain James Cook landed in 1770 to repair his ship, the Endeavour. Today, the town is a gateway to Cape York and a popular destination for visitors seeking a mix of history, Indigenous culture, and breathtaking landscapes. Its relaxed atmosphere and welcoming community make it a memorable place to visit and work.
